Gluten-Free Brownies

Fudgy, chocolatey brownies that are gluten-free and refined-sugar free!

Ingredients

  • 1/2 cup Butter
  • 4 oz. Unsweetened Baking Chocolate divided
  • 1/2 cup Honey this can reduced to 1/3 cup, if desired
  • 1 Egg
  • 1 tbsp. Vanilla Extract mint, almond or another flavored extract would be a fun twist
  • 2-3 tbsp. Coconut Flour
  • 1/2 tsp. Baking Soda
  • 1/2 cup Chopped Walnuts more for topping, if desired
  • 2 tbsp. Cream Cheese melted, for drizzling on top

Instructions

  • Preheat oven to 350 degrees, and grease an 8X8 baking dish.
  • Using a double boiler, melt 2 ounces of chocolate and butter. Once melted, remove from heat and add in honey.
  • In a medium mixing bowl, combine coconut flour and baking soda.
  • Pour chocolate mixture over dry ingredients. Add egg and vanilla. Stir well.
  • Add in chopped walnuts, and stir.
  • Pour batter into greased baking dish. Bake for 15-20 minutes, or until center is set.
  • While the brownies are baking, melt the remaining chocolate in the double boiler. In a separate bowl, heat cream cheese until it is pourable. (This will be a bit more than softened, but be sure to watch as it can overheat and burn quickly.)
  • When the brownies are finished baking, remove from the oven and allow to cool, slightly. Drizzle cream cheese and melted chocolate on top of the brownies, and sprinkle remaining chopped walnuts.

Notes

This recipe is one that I've tweaked from Gluten Free Fix. I did find that using just 2 tablespoons of coconut flour wasn't "enough" each time I made it. At times I had to add a bit more coconut flour. Once all the ingredients are combined, the batter should resemble a typical brownie batter.
