Preheat waffle maker according to directions.
Combine all dry ingredients in a mixing bowl. Stir.
In a separate measuring container, combine wet ingredients and stir well.
Peel and finely dice apples. Add to dry ingredients and stir.
Pour wet ingredients into dry and stir until combined. Do not over mix.
Add 1/4 cup of batter per waffle section of the waffle iron. Cook according to waffle maker instructions, or until waffles are golden brown.
Serve with butter and maple syrup.
Store leftovers in covered container in refrigerator for up to 5 days.
