It’s All Gravy

My biscuits bring all the….people to my table?! (And they’re like, it’s better than… Hahaha, sorry!) My early 2000’s are showing again…

Ok, for real. Yesterday, I shared my favorite (and most delicious!) sourdough biscuit recipe. It is the perfect addition to any meal, but could make a simple meal on its own. I’m sure my kids would not be the least bit upset if I said we were just eating biscuits for dinner.

But, if they had a choice, they would ask for sausage gravy to go along with the biscuits.

On a side note, when I first got married 12 years ago, I didn’t eat any meat that came from a pig. In fact, I thought it not only tasted bad, but I couldn’t even stand the smell. I’d have to leave the house if my handsome hubby wanted to cook bacon or sausage for breakfast! Wow, I sure have changed over the years!!

Now back to the good stuff…. The gravy!

I find it’s best to start making the biscuits first. Once they are in the oven, switch to making the gravy. I also brown the ground sausage the day before so I can use the cast iron skillet (I only have one…)

For a basic gravy recipe, all you need is a few tablespoons of butter, a few tablespoons of flour, and about a cup of milk. (If you are making a meat flavored gravy, swap the milk for broth.)

Start by melting the butter…

Then, add flour. Whisk until it clumps together (this is the “roux.”)
Add milk, and continue whisking until it is the desired thickness. If you are wanting sausage gravy, this is this is a good time to dump it all in!
Remove from heat, but keep warm until ready to serve with biscuits. (I have used this gravy on pasta before and it was yummy!)
