Vanilla Honey Cream-Sicles

Here in Oklahoma, we have a few seasons: Winter which lasts about 2 months. Spring that lasts from the end of March to the beginning of April. And, SUMMER that takes up the rest of the year.

The temps go from freezing to a short reprieve of ideal to dripping hot!

Ok, sure we have plenty of cool days sprinkled in the summer months. And some lovely and warm days scattered throughout the winter weeks. But, if I had to name one word for Oklahoma: HOT!!

Which naturally means….

Popsicles!!!!

Am I right?! We have tried so many different flavors over the years. From very healthy to very unhealthy! Today, I will be gracious and share one of the more simple recipes that could technically fall in both categories of healthy-ness, depending on what camp you are in!

Vanilla Honey Cream-sicles
All you need for these delicious treats are: heavy whipping cream, milk, honey and vanilla.

The tools: bowl, electric mixer and popsicle molds.

Begin by whipping about a cup of cream. (I really tend to eyeball most recipes and this is definitely one of them!)
Keep in mind the size and quantity of your popsicle molds, and go for about half that amount of whipped cream. Also, remember that when whipping 1 cup of cream, it becomes about 2 cups after incorporating all that air!

While whipping the cream, add in 1 tbsp. of vanilla and plenty of honey. (We did about half a cup, but this really should be to your taste!)

Once the cream is fully whipped and stiff, add about 1 cup of milk. Use a spatula to gently fold the milk into the cream. Then, scoop the mixture into your popsicle molds and freeze overnight.

These creamy popsicles taste similar to ice cream, yet hold the shape of the mold.
