A Chocolate Recipe to Save the Day

There are just those days when you need chocolate. (Am I right?!) Be sure to hit the “Jump to Recipe” link if you are in desperate need, and don’t have time to read this post. You can always come back to the words after you’ve had the chocolate fix!

After switching our family to the GAPS diet, I felt as if we would never eat “normal” foods again. While that is partly the point, I knew there would be times when we would need a solid dessert recipe that included chocolate. Real chocolate. Not just that cocoa powder and melted coconut oil stuff. I am talking the real-doesn’t-taste-like-coconut-CHOCOLATE! (Even Disney Princesses agree that chocolate is Uh-mazing!)

So began the search. I looked everywhere for a good recipe that included real, unsweetened chocolate and recipes that tasted good, all while not breaking the budget. Some recipes included an enormous amount of honey, and while I buy this in bulk, it is still expensive. Other recipes required 6!!! eggs. (Our lady layers were on strike the month that I came across that recipe, so obviously it didn’t meet the mark.) And don’t forget about all those extra ingredients in many “healthy” food baked-goods.

Then, one glorious day, I found the perfect recipe. I’ve tried it out multiple times, made a few tweaks and, glory-be, it’s a winner! It requires a small number of ingredients, and only one egg! And, while I haven’t tried it with a dairy-free option, I have a feeling it would be fine to swap the butter for you fave substitute. Ok, are you ready?

Gluten-Free Brownies

Fudgy, chocolatey brownies that are gluten-free and refined-sugar free!

Ingredients

  • 1/2 cup Butter
  • 4 oz. Unsweetened Baking Chocolate divided
  • 1/2 cup Honey this can reduced to 1/3 cup, if desired
  • 1 Egg
  • 1 tbsp. Vanilla Extract mint, almond or another flavored extract would be a fun twist
  • 2-3 tbsp. Coconut Flour
  • 1/2 tsp. Baking Soda
  • 1/2 cup Chopped Walnuts more for topping, if desired
  • 2 tbsp. Cream Cheese melted, for drizzling on top

Instructions

  • Preheat oven to 350 degrees, and grease an 8X8 baking dish.
  • Using a double boiler, melt 2 ounces of chocolate and butter. Once melted, remove from heat and add in honey.
  • In a medium mixing bowl, combine coconut flour and baking soda.
  • Pour chocolate mixture over dry ingredients. Add egg and vanilla. Stir well.
  • Add in chopped walnuts, and stir.
  • Pour batter into greased baking dish. Bake for 15-20 minutes, or until center is set.
  • While the brownies are baking, melt the remaining chocolate in the double boiler. In a separate bowl, heat cream cheese until it is pourable. (This will be a bit more than softened, but be sure to watch as it can overheat and burn quickly.)
  • When the brownies are finished baking, remove from the oven and allow to cool, slightly. Drizzle cream cheese and melted chocolate on top of the brownies, and sprinkle remaining chopped walnuts.

Notes

This recipe is one that I’ve tweaked from Gluten Free Fix. I did find that using just 2 tablespoons of coconut flour wasn’t “enough” each time I made it. At times I had to add a bit more coconut flour. Once all the ingredients are combined, the batter should resemble a typical brownie batter.
