Delicious Valentine’s Treat

I’m going to let you in on a little secret…. This post really has nothing to do with country living, but everything to do with that pesky little holiday that rolls around one day a year and suckers everybody into buying gifts for those they love.

Each member of our family does enjoy a secretly-bought box of chocolates (although it’s never a secret!) and a handmade card, or two, or 10! So far this week, I’ve received at least 5 pre-Valentine’s cards and gifts from the kids (and my youngest is currently walking around disinfecting light switches, “Cuz tomorrow is Valentine’s, Mom.” Ok?!)

Possibly my favorite so far: “You’re A-doiley-bol”

There has been a LOT of decorating, and card making for the party the kids will be attending, as well as plans of all the food we will be eating (which so far is anything, in a heart shape!!) Dessert happens to steal the show: cream-cheese brownies and Oreo Truffles!

I found this magical recipe almost a decade ago, and make it often. Especially when I want to make friends. Or keep them…

Oreo Truffles
1. Blend 1 pack of Oreo’s (any flavor, but we usually stick to the regular) and 1 block of room temperature cream cheese.

2. Use a spoon to scoop out the “dough” and place in rows on a cookie sheet covered with wax paper. Then, roll into balls. Put pan into fridge for about 30 minutes, or until dough is firm.

3. Melt chocolate of choice (white is prettier, but semi-sweet tastes better!) and dip one ball at a time into melted chocolate. Place back onto cookie sheet, and return to fridge once all truffles have been dipped.

4. Once the outer layer is hard, you can eat!, re-dip them and add sprinkles, or decorate with an alternating color of chocolate or thinned out Peanut Butter. (As shown above)

A few tips on working with chocolate: Never add butter, milk or water to “thin” out chocolate. I have learned this the hard way many years ago. Use an oil based product like coconut oil. Also, before the chocolate hardens on your bowls, utensils and counters, quickly clean it with hot, soapy water and vigorous scrubbing. (Or let your kids clean them…. I have caught mine licking chocolate off tables, walls, counters, and….floors!)

This simple, yet super fancy treat will be a delicious addition to your Valentine’s Day celebration. It really does not take long, maybe 30 minutes of hands-on time, and can still be made before tomorrow! Go ahead, run to the store to get those 3 magical ingredients that are not in the Valentine’s section along with every other man in town! You will not regret it!!
