If you have hung around my house, or my blog, for any amount of time you probably know a few things about me:
1. I love eating healthy & making food from-scratch
2. I really have a strong dislike for sugar (aka “Table Sugar” or the white, cheap stuff)
3. I still have a major weakness for chocolate….
And while this doesn’t really fit with the above list, it needs to be said that I hate complicated recipes that use 15 ingredients and dirty half of the tools in the kitchen. Because of all of that, I have one cookie recipe that I always, without fail, return to for when the need occurs. An eight-ingredient recipe that uses 1 bowl will always beat any recipe, in my opinion!
Now, let me jump back many years ago to when I first got married and DIDN’T know how to cook. As in anything! The first meal I made as a newlywed for my handsome new hubby was a boxed rice kit and a baked piece of fish. It went okay, but there was zero skill involved (& zero veggies…..) Not long after, I figured I was ready to tackle something more complex, like a cookie. Everybody can make cookies, right? WRONG!
In fact, I struggled for years and even gave up the idea of ever being able to make a decent cookie. Until I had kids and realized they like cookies. A lot! And, every major holiday has its own cookie. There is even a monster dedicated to this beautiful kitchen creation. (One day, I will need to share my award-winning Cookie Monster Ice Cream recipe…)
I started asking everyone I knew what their go-to recipe was, and finally found the perfect one. Naturally, as I have finally learned the art of baking and cooking, I have made a few of my own tweaks to that original recipe that I was given. The cookie is plump, with a crunchy outside and chewy inside. It doesn’t spread completely flat, but for us that is okay! And, it is full of chocolate. (See below, and start drooling…)
Of course, nowadays when I make this recipe, it isn’t too frequently, and I use the best quality ingredients I can source. Organic, non-GMO, and local, if possible, and try not to sweat it if I am unable to!
The ONLY Chocolate Chip Cookie
Ingredients
- 1 stick Butter cold
- 1/2 C "White" Cane Sugar
- 1/4 C Brown Cane Sugar
- 1 Egg room temperature
- 1 1/2 C Flour
- 1/2 tsp Baking soda
- 1/4 tsp Fine Sea Salt
- 3/4 C Chocolate Chips or Chunks use a variety of sizes for best results
Instructions
- Preheat oven to 350 degrees. Prepare cookie sheets by lining them with parchment paper or a silicone baking mat. Set aside.
- Melt 1 stick of butter in a large glass mixing bowl in microwave for 40 seconds.
- Add in sugars and beat together for about 45 seconds.
- Add in 1 egg and beat for 15 seconds.
- Add in flour, baking soda, and salt. Beat until just combined.
- Stir in chocolate chips/chunks.
- Scoop dough onto prepared cookie sheets using a standard-sized cookie scooper. Recipe makes 18-24 cookies.
- Bake for 8-10 minutes on 350 degrees or until golden brown.
